So I was actually able to cook a few things since we are now all home :). I love to cook. My friend Andrea gave me a magazine with some great summer recipes in it. This was one of them. If you like this kind of stuff this was GREAT! I will make it again for sure. Most of the ingredients are things around the house -- those are my favorite kind of recipes!
1 tube cresent rolls
2 tsp Dijon mustard
2 zucchinis
1 cup chopped onion
Butter
2 eggs
1 cup mozzarella
1 cup Colby-Monterey jack cheese
2 tbsp. dried parsley flakes
½ tsp salt
½ tsp pepper
¼ tsp dried basil
¼ tsp dried oregano
Separate crescent dough into eight triangles and place in a greased pie plate with points towards center. Press dough together to form a crust and seal seams. Spread mustard on dough.
In large skillet use butter to sauté zucchini and onion until tender and light brown.
In large bowl combine eggs, cheeses, seasonings, and finally zucchini mixture once tender.
Pour into crust. Take at 375 for 20-25 minutes.
