Father's Day Weekend

We went to Flora for Father's Day weekend. The Flora family had the chance to meet Garrett for the first time!

Zucchini Pie

So I was actually able to cook a few things since we are now all home :). I love to cook. My friend Andrea gave me a magazine with some great summer recipes in it. This was one of them. If you like this kind of stuff this was GREAT! I will make it again for sure. Most of the ingredients are things around the house -- those are my favorite kind of recipes!


 


1 tube cresent rolls

2 tsp Dijon mustard

2 zucchinis

1 cup chopped onion

Butter

2 eggs

1 cup mozzarella

1 cup Colby-Monterey jack cheese

2 tbsp. dried parsley flakes

½ tsp salt

½ tsp pepper

¼ tsp dried basil

¼ tsp dried oregano



 Separate crescent dough into eight triangles and place in a greased pie plate with points towards center. Press dough together to form a crust and seal seams. Spread mustard on dough.

 In large skillet use butter to sauté zucchini and onion until tender and light brown.

 In large bowl combine eggs, cheeses, seasonings, and finally zucchini mixture once tender.

 Pour into crust. Take at 375 for 20-25 minutes.
